Cheesy Bacon Potatoes - by Matt

3 Lbs baby red potatoes
1 large onion
1 can cream of mushroom soup
1 can cream of celery soup
3/4 Lb apple-wood bacon
16 oz shredded cheese
salt to taste
pepper to taste
crushed red pepper or Tabasco (optional)

Preheat oven to 375 degrees
Slice potatoes
Chop onion
Fry bacon and use paper towel to remove as much grease as possible

Spray 9x13 casserole with cooking spray.
Layer potatoes, onions, soup, bacon, and cheese. Season with salt and pepper every layer.
Add crushed red pepper or Tabasco to bottom layer for a little kick.

Bake 2 - 2.5 hours at 375
